When the weather turns warmer, it’s time to fire up the grill!

Not only does cooking outdoors keep the heat out of the house, but there is also something satisfying about grilling.

POP. POP. SIZZLE.

It’s that sound that the meat makes the moment it hits the hot grill. The aroma that permeates the air with a mouthwatering sensation like none other. Grilling season is on!

Grilling season means a lot of quick and easy meals, too. But it doesn’t mean only hot dogs, brats, and burgers all season long. Expand your recipes and try different meats like chicken or fish. Change it up with seasonings and marinades. The limit is your imagination!

When cooking chicken breasts, there are a couple of things to remember. First, chicken breasts can get tough on the grill. The quick heat can cause the meat to seize up, making it chewy. Second, be sure to cook the chicken all the way through. Check the temperature with a meat thermometer to see that it’s at least 165F. The char on the outside may make it difficult to spot done-ness on the inside.

Wild Mushroom Grilled Chicken

For moist, flavorful chicken breasts, try this uncomplicated wild mushroom marinade!

In fact, this is the simplest marinade of all — wild mushroom Italian dressing and some Wildly Organic Olive Oil!

The flavor is amazing, and it begs to be used on the grill. Over chicken, it’s absolute heaven. Tossing the dressing over some fresh grilled veggies, or a fresh garden salad is a great way to complete this meal.

Wild Mushroom Grilled Chicken
The marinade on this chicken couldn't be simpler! So fire up the grill and get ready to enjoy this super easy meal!

    Instructions
    1. Cover the chicken breasts with a piece of cling wrap or parchment paper.
    2. Pound to 1/2-inch thickness. Season both sides with salt and pepper.
    3. Blend the baby portobello mushrooms with the Italian dressing, and then add it to a gallon-sized plastic bag with the olive oil and a bit of salt and pepper, if you like.
    4. Place the chicken breasts in the bag and massage a bit to get the marinade into the meat.
    5. Place sealed bag in the fridge and allow to marinate for at least 1 hour.
    6. Preheat the grill to 400F. Line the grill with aluminum foil to help prevent sticking.
    7. Remove the chicken from the bag, and place on foil. Close the lid, and allow the chicken to cook for 8 minutes.
    8. Save the marinade.
    9. Flip the chicken breasts and cook for an additional 8 minutes, or until thermometer reads 165F.
    10. Remove from the grill, cover loosely with foil, and allow the meat to rest for 5 minutes while covered.
    11. While meat is resting, add marinade to a small sauce pan.
    12. Heat on medium heat and bring to a rolling boil for 5 minutes. Once boiling, turn the heat down to medium low and allow to the sauce to slightly reduce.
    13. Slice chicken breasts, if desired, and spoon marinade reduction over chicken.
