Whole30 Chicken Tenders {Gluten-Free, Paleo}

Missing your favorite meal while following a Whole30® or low carb diet? These Whole30® Chicken Tenders are delicious, crispy, and according to my kids, taste just like chicken nuggets. The perfect meal for children, the chicken strips are also paleo, gluten-free, and grain-free. Try them with this tasty Whole30 ranch dressing or by themselves. They are very easy to make and a fast meal to put together.

Ingredients used for making the best Whole30® chicken tenders

Organic Chicken Breast – We like free-range chicken.

Wildly Organic Almond Flour – I love to use this almond flour with chicken tenders because the flour is thicker than regular almond flour, and it gives the tenders a great texture. In addition, the nutritional value and health benefits of the Wildly Organic Almond Flour exceeds that of regular flour. It’s made with unbleached almonds and has been minimally processed. It has a great nutty flavor.

Eggs – Eggs can be optional if you are on an egg-free diet; however, they do help to keep the breading together. It’s best to use eggs from free-range chickens.

Wildly Organic Olive Oil – This oil is a great selection to use to cook the chicken strips. This high quality olive oil is made from organic olives from Tunisia. It has a great fresh flavor that is great to add to salads or dips.

Spices

Wildly Organic Himalayan Salt – Himalayan salt is one of the best to use for your health. It contains a great number of minerals, such as iron, that your body needs. Wildly Organic Himalayan Salt is hand-mined in the Himalayan mountains of northern Pakistan. I love that Wildly Organic does not add any anti-caking or free-flowing additives, leaving the salt in its unrefined and pure form.

Wildly Organic Black Pepper – It is made from organic black pepper. I love using it in the spice blend for these chicken tenders.

    Ingredients
    Instructions
    1. Cut the chicken breast in thin strips.
    2. Heat a couple of spoons of olive oil in an iron skillet under medium heat, while you bread the chicken.
    3. In a bowl, add almond flour and all the spices (except parsley). Mix well.
    4. In a different bowl, beat the eggs with 1 tablespoon of water.
    5. Take one strip of chicken at a time and add it to the almond mixture bowl. Coat the chicken with the flour, then dip it in the egg.
    6. Add the chicken back to the flour bowl, coating it again with the flour mixture.
    7. Add the chicken to the skillet, cooking with medium heat until both sides are well cooked and golden brown.
    8. Transfer the cooked chicken strips to a plate lined with paper towels. Sprinkle with parsley flakes. (Optional)
    9. Serve the tenders by themselves or with ranch dressing, honey mustard sauce, or another favorite.
