Slightly sweet with a hint of spice, these energy bites are a great snack to grab on the go for whenever the hunger strikes. With tasty ingredients like dates, pistachios, goji berries, cacao nibs, shredded coconut, and a hint of cayenne pepper, you really can’t go wrong with these tasty energy bites. They’re gluten-free, paleo and vegan, too!

Spicy Coconut Date Energy Bites Recipe

Coconut oil is well known for its thermogenic and metabolism-boosting properties. Not only can coconut oil bump up your metabolism, but it can also help warm you up when you’re cold.

I’ve eaten snacks containing a good amount of coconut oil when I’m cold. Before long, off come the wool socks and hoodie because I’m too warm!

But did you know that cayenne pepper also helps rev up your metabolism? The magical ingredient of cayenne that makes it spicy is capsaicin. Capsaicin is also responsible for that metabolic boost you get from cayenne! It’s also great for immune support, which is essential this time of year.

Wildly Organic Pistachios are raw, soaked, and dehydrated at a low temperature. They, along with dates and Wildly Organic Goji Berries, form the base for these nutritious energy boosting snacks.

Add in the rich goodness of coconut butter and coconut oil, shredded coconut flakes, the dark chocolatey punch of fermented cacao nibs, and a few seasonings. The result? A totally raw and vegan source of healthy nutrition that’s perfectly portable for on the go snacking.

Tips For Making Spicy Coconut Date Energy Bites

You’ll want to use a food processor for this recipe. When adding the dates and goji berries, pulse several times until the ingredients begin to move easily then process on high. Cutting large dates in half or quarters makes processing easier.

If your dates are exceptionally dry, try adding some Wildly Organic Coconut Syrup to help the mixture stick together better. Coconut syrup is also a great unrefined sweetening option if you want a sweeter treat. Don’t want to add more sweetness? Add water, a teaspoon at a time, until the mixture sticks together well when you pinch it.

When forming the energy bites, squeeze the mixture together very tightly. Form into a ball shape about the size of a large walnut, but don’t roll them. You can also make smaller energy balls for one-bite snacks.

As written, the energy bites have a nice amount of heat but are not overly spicy. If you like things really hot, simply add more cayenne pepper!

    Ingredients
    Instructions
    1. Add pistachios and cacao nibs to the bowl of your food processor and pulse several times until pistachios are broken down into small pieces.
    2. Add goji berries, dates, coconut butter, coconut oil, coconut flakes, seasonings, and coconut syrup (if desired) and pulse until ingredients begin to move smoothly.
    3. Process on high for several minutes until mixture will stick together when you pinch it.
    4. If needed, add water by the teaspoon (or coconut syrup) and pulse a few times until mixture will stick together.
    5. Form into balls by firmly squeezing and pressing the mixture together in the palm of your hand. Rolling will not work well.
    6. If desired, roll formed balls in shredded coconut.
    7. Store in an airtight container in the refrigerator.
