While these fritters are a great side dish for dinner, I love to eat them for breakfast. They are perfect alongside some scrambled eggs. Did you know it’s so easy to make your own paleo zucchini fritters at home?  And guess what? If you’re on the Whole30, these fritters are compliant!

For those who may have issues with certain foods, these zucchini fritters make a wonderful breakfast option because they’re also gluten-free and dairy-free. Using Wildly Organic Almond Flour in place of wheat flour gives them a boost of healthy fats but it also removes any gluten issues.

Another perk of these easy zucchini fritters is that they contain nutrition yeast. Nutritional yeast is a powerhouse when it comes to nutrients. It’s a complete protein, contains a lot of B vitamins and has a hefty dose of minerals too. Plus, it gives recipes an ever so slight cheesy flavor without actually adding any dairy!

Switch up your breakfast routine and add in more veggies with these paleo zucchini fritters. Loaded with nutrients and flavor, these paleo fritters are a tasty recipe the whole family will love.

    Ingredients
    Instructions
    1. Grate the zucchini and toss it with the sea salt. Let sit in a strainer for five minutes.
    2. Then, use your hands to squeeze the excess water out of the zucchini.
    3. Melt 1 tablespoon of coconut oil.
    4. In a large bowl, combine the eggs, zucchini and the melted coconut oil.
    5. Add in the almond flour, nutritional yeast, garlic powder, onion powder, baking powder, pink sea salt, ground black pepper, and arrowroot powder and mix until combined. Let sit for two minutes.
    6. Meanwhile, heat a large pan over medium-high heat. Add the remaining two tablespoons of coconut oil and let melt.
    7. Once the pan and oil are hot, portion out the fritters. Use an ice cream scoop to scoop out the batter, press it together with a spatula (so it will hold together) and place in the oil. Then, use a form to press the fritter down until about ¼-1/2 inch thick.
    8. Cook uncovered for 6 minutes until the bottom is golden brown and then flip to the other side. Cook for another 4-6 minutes until cooked through.
    9. Top with your favorite toppings, such as chipotle mayo, sliced avocado, or cashew sour cream.
