Chocolate Almond Coconut Cookies
These chocolate almond coconut cookies are gluten free, dairy free and insanely addictive. They make a great dessert to share or to hoard in your freezer and eat yourself!

    Instructions
    1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
    2. In a large bowl, combine almond flour, baking powder, cacao powder, coconut flakes and coconut sugar. Whisk to combine. Set aside.
    3. In a small bowl, heat the coconut oil, almond butter and honey in the microwave until the oil is just melted.
    4. Pour wet ingredients into the dry ingredients. Then, add in the egg and stir until into dry and mix until combined.
    5. Portion out the cookie dough into 10 balls and place on the baking sheet. Press them down slightly.
    6. Top the cookies with the 2 tablespoons of coconut.
    7. Bake for seven minutes, flip the pan and bake for another three minutes. Remove from the oven and let the cookies cool on the tray.
