Almond Butter Granola Bars {Gluten-Free}

A simple, tasty snack perfect for kids! These almond butter granola bars are loaded with nutrient-dense, healthy fats to keep kids full and fueled on the go.

Save yourself some sanity and whip up a batch of these granola bars to have on hand. They’re perfect for:

  • Running out the door
  • After school snacks
  • A quick breakfast in the morning (paired with fruit)

These granola bars have a little bit of everything in them and are sweetened with Wildly Organic Coconut Syrup. This syrup is similar to maple syrup in the ways it’s processed but has a more caramel-like flavor. Between the syrup and the dried fruit these granola bars are sweet but not too sweet.

One of the problems with quick snacks is that they often give a lot of fuel (sugar rush!) but result in a crazy crash. These granola bars are loaded with healthy fats and plant-based protein to help stabilize the release of the sugars keeping you fuller longer.

The granola bars bind together with egg whites which means that they hold together well (no crumbs all over the car!) This makes them easy snacks to travel with for longer car rides or busy errand days.

Notes & Tips

These almond butter granola bars can be stored in either the fridge or the freezer in airtight containers. If storing in the freezer, simply pull them out and let them thaw in the fridge until ready to use or sit it on the counter for a few minutes.

The dried fruit is interchangeable. Dried blueberries, cranberries, and goji berries give these bars a nutrient-packed punch. However, you can use a blend of dried berries, or whatever you happen to have on hand. Regardless, the bars will come out delicious!

    Instructions
    1. Preheat the oven to 300F degrees.
    2. In a food processor, combine the oats, walnuts, and pumpkin seeds. Process until mostly flour with a few chunks remaining for texture. Pour into a large bowl.
    3. Heat the coconut oil and whisk it in with the coconut syrup and almond butter.
    4. Add the dried berries and coconut to the oat mixture and pour over the coconut oil blend. Mix until combined. Add in the egg whites and stir.
    5. Line an 8" x 4" pan with parchment paper and scoop the bar mixture into the pan. Use wax paper on top or a greased spatula to firmly and evenly press the mixture out.
    6. Bake for 25 minutes. Remove from the oven and let cool in the pan. When cool, cut into 5 bars.
